Beans and Greens

Beans and Greens — we’re always making them at Commissary, with whatever seasonal greens are around, ideally from local farms. It’s rich with olive oil, a little red pepper flakes, and beautiful beans from cult bean growers/scouters Rancho Gordo — usually we get big fat ones like Royal Corona and Christmas Lima, which make  the dish feel heartier. As great and Beans and Greens is like we serve it at the café — hot with grated cashew cheese on top—it’s possibly even better as a meal starter. It stretches out meals fantastically.
