We’ve been wanting to make a vegan white chocolate bar forever, but I knew it would be pricey and a lot of work so I kept procrastinating about it. But when we started working with Crown Maple, a local organic maple producer right across the river from us, I realized that huge quantities of organic local maple sugar were within our grasp and I knew the time had come. I’ve been obsessed with making a blonde chocolate—the new trend in the chocolate world, basically toasty white chocolate—for a while and I was excited to mess with maple sugar to see if it would give our white chocolate an extra toasted flavor. It did, and it’s so crazy good that we’re unleashing it on the planet today and I can’t wait for you to love it as much as we do.
It’s pricey, but the ingredients are all pretty pricey (maple sugar is maple syrup cooked down and down and down forever–those sugar maples have to work so hard for it!), and because we make it ourselves from the raw ingredients, butter-to-bar, in a huge terrifying mélangeur that squishes the ingredients between giant stone rollers for 12 hours at a time.
It’s a treat, for sure.
