Who says meat-eaters get all the bacony fun?
It took us forever to create this bar. We started with a complaint:
Why is it that vegetarians seem to always take the easy way out? We want something smoked, so we add liquid smoke. WHAT IS THAT? Oy! I wanted to make BACON, not something vaguely crunchy + liquid smokey. So, as someone who’s been vegan decades but really really wanted to MAKE BACON, I mustered up my courage, read a lot of blogs about making bacon (I held my hand over the screen to block the photos—my commitment to the cause of advancing veganism through fancy culinary hijinx doesn’t actually extend to being able to look at photos of bacon-to-be, alas.) and bought a smoker.
Then I asked friends of mine to tell me what bacon tasted like.
Here’s what I got: fatty, smoky, salty, rich, umami, deeply-flavored.
So I thought about what vegan foods were fatty, smoky, salty, rich, umami, and deeply flavored, and I smoked all of them. And I started driving everyone crazy at the shop by forcing them to taste my coconut flakes/yuba/potato skins/ shiitake mushrooms smoked with hickory/alder/ash/applewood and infused with sea salt/shoyu/tamari/coconut milk/caramel sauce/miso.
Then I made a fudgy caramel sauce infused with homemade red miso and ground, smoked local shiitake mushrooms (LOCAL VEGAN BACON!) and mixed that with chocolate.
I mixed in the winner from the smoking tests, yuba (do you know about yuba?? It’s awesome! It’s the skin that rises to the top when making soy milk. You’ve maybe had it in sushi rolls. In the course of this bar I realized that almost all yuba is genetically modified, so I started making my own with organic soybeans. Now we use fabulous, non-GMO, organic, artisanal Hodo Foods yuba.) with my smoky salty super-rich caramel sauce, then I mixed that with chocolate.
It’s like a super crazy fatty tootsie roll, that soft brownie-like texture, but a bacony flavor.
Done. One big thick wild wild wild chocolate bar.
Wait, did I tell you the part yet about how everyone who tastes this bar sort of melts to the floor in an ecstacy of fatty, smoky, salty, rich, umami, deeply-flavored joy and happiness?
