Ingredients (always vegan + always conflict free)
Ingredientstruly ethical chocolate (cocoa mass, cocoa butter, vegan sugar, soy lecithin, vanilla), homegrown organic flowers (our garden is not certified organic, but I never put anything bad on it [or anything at all, um] and grow everything from organic seeds), cornstarch, organic vegan fair trade evaporated cane juice sugar.
We’ve been making these pals for years but never put them online because we never had enough flowers to really make them in bulk.
Then last year I hunkered down and learned about things like “succession planting” and “deadheading” — concepts never before known to me. I’m an enthusiastic buyer of produce from local farms, not such an enthusiastic weeder. But gardening—particularly the at-work variety, which involves escaping the oppressive perennially freezing 63-degree chocolate shop to be outside under summer sunny skies—makes me deeply happy. So I’m learning little by little. And so we have the flower tablets. The flowers are grown at the shop and candied by all of us, then decoratively arranged on 66% semisweet chocolate squares. We package them in our compostable plastic bags and there you are—a little taste of New Paltz, literally.
Please be aware that these tablets are small & pretty pricey for their size. It’s because a ton of labor goes into drying all those flowers—not to mention growing them. We also pepper them with select edible flowers we’ve sourced from outside of our own garden to keep them flush with color and supplemented with different flavors. These are something to savor, for sure.
