This is a really good bar. A classic layered situation. Preserved orange caramel made with California organic blood oranges we saturate with sea salt and let preserve for months & months, then a layer of earl grey tea-infused ganache—a little tart, mega fragrant with black tea and vibrant bergamot—slathered over the caramel. Slab it, slice it, enrobe it in 65% dark chocolate, garnish with a good smattering of (usually homegrown, unless it's been a bum year) edible flower petals. OK. A gem!!
